Ingredients:

  • 2 cups of Grec yogurt or sour cream
  • 1 cucumber or 2/3 mini cucumbers
  • Sea salt
  • Juice from half a lemon
  • 3-7 garlic scapes
  • 3 tbsps of olive oil
  • Optional: 4tbsps of fresh mint or fresh dill 
  • Optional: 1 hot pepper 

Instructions:

  1. Peel the cucumbers and cut down the center. Remove the seeds and grate the cucumbers. Place them in a strainer and place them over the bowl. Sprinkle with salt and let sit for at least 15 minutes.
  2. During this time, dice the garlic scapes as well as the hot pepper if using. Pass these in a food processor with the fine herbs (if used). Transfer to a large bowl.
  3. Add the olive oil and a pinch of sea salt to the bowl. Mix.
  4. Place the cucumbers into a clean dishcloth and squeeze them to remove the extra water.
  5. Add to the bowl: yogurt/sour cream, cucumbers, and lemon juice. Mix.
  6. Ajustez le sel et le jus de citron au gout.
