Ingredients:
- 2 cups of Grec yogurt or sour cream
- 1 cucumber or 2/3 mini cucumbers
- Sea salt
- Juice from half a lemon
- 3-7 garlic scapes
- 3 tbsps of olive oil
- Optional: 4tbsps of fresh mint or fresh dill
- Optional: 1 hot pepper
Instructions:
- Peel the cucumbers and cut down the center. Remove the seeds and grate the cucumbers. Place them in a strainer and place them over the bowl. Sprinkle with salt and let sit for at least 15 minutes.
- During this time, dice the garlic scapes as well as the hot pepper if using. Pass these in a food processor with the fine herbs (if used). Transfer to a large bowl.
- Add the olive oil and a pinch of sea salt to the bowl. Mix.
- Place the cucumbers into a clean dishcloth and squeeze them to remove the extra water.
- Add to the bowl: yogurt/sour cream, cucumbers, and lemon juice. Mix.
- Ajustez le sel et le jus de citron au gout.
