This is the perfect salad for summertime! Both refreshing and full of protein, this salad can follow you on all your adventures.
- ½ cup cubed feta cheese
- ¼ cup thinly sliced red onion
- 2 tbsp olive oil
- 1 tsp lemon zest
- 2 tbsp lemon juice
- Pinch of hot pepper flakes
- 2 cups cubed seedless watermelon
- 1 ½ cup fresh blueberries
- 1 cup chopped cucumber
- 1/4 cup loosely packed, thinly sliced fresh basil
- ¼ cup walnuts (optional)
- Mix the feta, red onion, lemon zest and juice as well as the pepper flake and set aside while you chop the other ingredients.
- Toss the watermelon, blueberries, cucumber and basil. Transfer to serving dish and top with feta mixture and walnuts if you are using.
