The perfect sweet and salty side dish.
Ingredients:
- 1 Eggplant
- Salt
- 2 eggs
- Vegetable oil
- Favourite marinara sauce
- Maple Syrup
- Fresh parmesan cheese
- Mozzarella cheese
Instructions:
- Thinly slice the eggplant and place it on a dishcloth. Salt and cover with another dishcloth. Let sit for 30 minutes to remove water.
- Heat oil in a pan and mix the eggs in a bowl with a little water.
- Dip the eggplant in the egg and lightly fry each slice. Place on a dishcloth or paper towel to absorb excess oil.
- Heat up the marinara sauce and add the maple syrup to the sauce.
- Place a small layer of sauce at the bottom of an oven-safe dish and then cover with a layer of eggplants. Sprinkle with parmesan cheese. Alternate the three layers until all the eggplant is covered.
- Cover with mozzarella and bake about 20 minutes.
