Ingredients:
- ½ tbsp of butter
- 2 lbs of butternut squash
- Salt and Pepper
- 1/3 cup of parmesan cheese
- ½ tbsp of dried sage
- ½ tbsp of fresh garlic, minced
- 1/8 tsp of cayenne pepper
- ¾ cup of 35% cooking cream
- 2 tbsps of maple syrup
- ½ cup of cheddar, grated
Instructions:
- Heat the oven to 400ºF.
- Grease an 8 by 8 oven-safe dish with butter.
- Peel your butternut squash. Cut down the center and remove the seeds. Slice thinly to make half rounds. (NOTE: Thinner than in the image.)
- Place your squash in the dish to cover the bottom of the dish (about half). Season with salt and pepper. Add half of the parmesan cheese and the sage. Place the rest of the squash in the dish and season again with salt, pepper, and the rest of the sage.
- In a bowl, mix the garlic, cayenne pepper, and cream. Pour the mixture into the dish with the squash.
- Cover with aluminum foil and cook for about 45 minutes, until the squash is fully cooked.
- Remove the aluminium foil and add the cheddar and the rest of the parmesan.
- Return to the oven and broil at 500ºF for about 5 minutes.
