Perfect hot or cold, these will please all ages!
Ingredients:
- 2 cups of zucchini, grated
- ½ cup of flour
- 1 large egg, mixed in a bowl
- Salt and pepper
- 1 tbsp of maple syrup
- ¼ cup of green onions, cut into small rounds
- 1 ½ tbsp of olive oil
Instructions:
- Place your zucchini in a strainer over a bowl and sprinkle with salt. Let sit for 15 minutes. With your hands, squeeze them to remove excess water.
- Mix the zucchini with flour, eggs, green onions, salt, pepper, and maple syrup in a large bowl.
- Cover a plate with paper towels.
- Heat the oil in a pan on medium heat. Place about 3 tbsp into the oil and push down to create the desired shape. Fry each fritter for 3 minutes on the first side and 2 minutes on the other. Once golden, place them on the prepared paper towels and salt.
